Castell Coch Cobbler

A homage to the red castle situated a few miles from Cardiff Distillery.
A delicious fruity gin cocktail.

Ingredients:
50ml Jin Caerdydd
25ml Rioja
10ml Sugar Syrup
A few strawberries and raspberries
Soda Water

Method:
Fill a Copa glass full with ice.
Muddle strawberries and raspberries with syrup in a Boston shaker
Moderately shake for 10 seconds
Strain into glass
Add the Gin and Rioja
Garnish with raspberries

Ingredients:
50ml Penderyn Madeira Whisky
Bar spoon of Welsh honey
10ml blood orange juice
2 dashes of orange bitters

Method:
Pour all ingredients in whisky tumbler, add ice and stir.

Menai Martini

Ingredients:
37.5ml Aber Falls Welsh Dry Gin
5ml Dry Vermouth
Garnish Entwined Lemon and Lime Rinds

Method:
In an ice filled mixing glass add the vermouth, gin and stir for 20-30 seconds. Check the cocktail has reached the desired temp and diluting before straining the cocktail into a pre-chilled martini glass.

Chocolate Orange Delight

Serves two

Ingredients:
300ml full-fat or semi-skimmed milk
100ml double cream
75g melted chocolate (or half chocolate and half the same amount
of powdered drinking chocolate)
Spice mix: a few cloves, a little twist of black pepper,
a few drops of vanilla, a sprinkle of nutmeg and cinnamon
70ml Hensol Crawshay Orange Zest Gin

Method:
Add your milk, cream and chocolate (plus drinking chocolate, if using), plus your spice mix to a thick bottomed pan and heat very gently for about 10 minutes to infuse the liquid with the spices. After 10 minutes, increase the heat and bring to the boil, stirring constantly to ensure a smooth texture. In two cups or heatproof glasses, add 35ml of the gin to each, then strain the spiced hot chocolate into the cup over the top of your gin and serve!

Hot Gin Toddy

Ingredients:
40ml Welsh gin
50ml hot water
20ml freshly squeezed lemon juice
1 tsp honey, sugar or simple syrup
Cinnamon stick and a slice of lemon or orange, to garnish

Method:
Combine all of your ingredients except the garnish and stir well (until the sugar or honey has completely dissolved).
Garnish and serve!

Ingredients:
25ml Welsh Sloe Gin
Welsh sparkling wine, to top up

Method:
Half an hour before you want to serve your cocktail, pop your flutes into the fridge to chill. To make your cocktail, simply add your Sloe Gin to the chilled glass and top up with your Welsh sparkling wine!
